Are you an experienced Sous Chef looking for a new challenge? Then, we have the perfect opportunity for you! We are seeking an experienced Sous Chef to join the kitchen brigade of this amazing hotel in Co Kerry.
The Sous Chef will report directly to Head Chef and assist in the smooth running of the kitchen, including the management of Chefs and Kitchen Porters. The ideal candidate will have experience as a Junior Sous/Sous Chef in a 4-star hotel or upmarket restaurant.
Responsibilities include:
- Delivering excellent quality food and the highest standards consistently to guests.
- To carry out departmental audits to ensure with the Head Chef that standards are met.
- Assisting in the recruitment and selection of chefs and kitchen porters.
- To carry out job chats with kitchen porters and commis chefs and ensure that areas of responsibility are clean and well maintained.
- Ensuring chefs and kitchen porters comply with food hygiene and health and safety regulations.
- Monitoring costs in the department and ensuring that spend is in line with purchasing procedures.
- Helping create menus and implement ideas, while consistently driving standards.
- Assisting in monthly stocktaking.
- Ensuring departmental daily briefings are carried out.
- To consistently record temperatures in line with HACCP.
- Attending meetings as required.
- Other duties as assigned by management.
